  4. Add cauliflower and garlic to a food processor or blender with reserved water, vegan butter, cream cheese (or sour cream), Parmesan, salt, and pepper. Blend until creamy.

This vegan and gluten-free dish transforms simple cauliflower into a decadent side, enhanced with fresh garlic and a touch of plant-based butter for a rich, buttery taste.

Equipment:

Food processor or blender, large stovetop pot, measuring cups/spoons, cutting board, sharp knife

Ingredients:

1 head cauliflower, chopped into florets

1/4 cup vegan salted butter

1/4 cup vegan cream cheese

1/8 cup vegan Parmesan cheese

3 garlic cloves, whole

1/4-1/3 cup reserved cooking water

1/2 tsp sea salt (adjust according to taste preferences)

1/2 black pepper (adjust according to taste preferences)

Instructions:

1. Begin by washing and chopping cauliflower head into florets and peeling garlic cloves.

2. Boil cauliflower florets and fresh garlic for about 10 minutes, or until fork tender.

3. Drain cauliflower and garlic, saving a little bit of water for the proceeding blending step.

4. Add cauliflower and garlic to a food processor or blender with vegan butter, cream cheese, Parmesan, salt, and pepper. Add 1/4 cup reserved cooking water. Blend until creamy. You can add the additional reserved cooking water if you need, depending on the consistency.

5. To serve, add additional butter or seasonings, fresh herbs, microgreens, or other desired toppings.

In this recipe, I use Earth Balance salted vegan butter sticks, Violife cream cheese block, and Good Planet grated Parmesan cheese. You may use any vegan alternative brands you prefer!
