Nicole Riggs

After being diagnosed with celiac disease as an already devote vegetarian of 8 years, I began experimenting with various plant-based, gluten-free meals that would not only nourish and heal my body, but also fulfill my cravings and allow me to indulge in my favorite comfort foods and childhood classic meals. I focus on unique, simple recipes using nutritious, whole food ingredients. Aside from being a plant-based advocate, I am also a full-time nanny and lover of all things fitness. In my free time, you can find me doing yoga, painting, reading, or cooking. My passions for nutrition, spirituality, and animal rights shape the meaningful foundation of the Meatless & Wheatless blog.
