Nicole Riggs

After being diagnosed with celiac disease, I turned to my passion for vegetarian cooking—already cultivated over eight years—and began creating gluten-free, plant-based meals that would nourish my body, satisfy my cravings, and let me enjoy the comfort foods and childhood favorites I’ve always loved. I focus on crafting simple yet unique recipes using wholesome, nutritious ingredients. Alongside my love for plant-based living, I’m a full-time nanny and fitness enthusiast. In my spare time, you’ll find me practicing yoga, painting, reading, or experimenting with new recipes. The Meatless & Wheatless blog reflects my deep commitment to nutrition, spirituality, and animal rights, where I share my journey and recipes with others who share these values.
