In a skillet, heat avocado oil or extra-virgin olive oil. Once hot, you’ll add your chopped yellow onion and saute until fragrant and translucent. This is the best part - remember to bask in the scents!
Next, you’ll add the main ingredient: shredded green cabbage. It may seem like a ton of cabbage, but don’t worry, it’ll cook down. Saute your cabbage and onion on medium heat, stirring frequently to ensure even cooking. Be sure to add more oil if you need to throughout the cooking process. You’ll know it’s done when your cabbage is cooked down and soft. Taste test to ensure you’ve got the perfect texture.
Season & Serve
Finally, you’ll add your seasonings. I like to add the seasonings at the end of the cooking process so that they’re fresh and don’t risk getting burned or cooked out. This can sometimes interfere with the taste and potency.
In this recipe, we keep it simple. Just salt and pepper! We find that the oil and sauteed cabbage provide such a delicious and unique flavor profile, that adding loads of seasonings would be pointless. A basic seasoning approach allows the natural, earthy flavors to stay prominent. However, if you’re feeling adventurous, feel free to experiment and add the seasonings of your choice.

Equipment:

Ingredients:
1 head green cabbage, shredded
2/3 yellow onion, chopped
1/8 cup avocado oil or extra-virgin olive oil
sea salt
black pepper
Instructions:
Shred or thinly slice green cabbage and chopped yellow onion.
Heat oil in a skillet. Once hot, lower heat to medium-low and add yellow onion. Saute until translucent and fragrant.
Add shredded green cabbage to skillet. Cook on medium heat, stirring frequently, for approximately 20 minutes, or until cabbage is cooked down and soft. Add a bit more oil throughout the cooking process if you feel it needs it.
Once cooked, add salt and pepper, then serve. Perfect as a side dish or salad addition.
