oven, cutting board, medium bowl, parchment paper or silicone baking mat, measuring cups/spoons, blender

Ingredients:

Oven-Baked Sweet Potato Fries

4 medium-sized sweet potatoes, washed and peeled

2-3 tbsp avocado oil or extra-virgin olive oil

4 fresh sage leaves

6 sprigs fresh thyme

2 sprigs fresh rosemary

Roasted Garlic Aioli

1/2 cup vegan mayonnaise

1 head fresh garlic

1 tsp avocado oil or extra-virgin olive oil

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/4 tsp black pepper

1/4 tsp cracked sea salt

Instructions:

Oven-Baked Sweet Potato Fries:

  1. Preheat oven to 375 F.

  2. Cut sweet potatoes into fry-form by slicing vertically 4-5 times, then cutting the slices again vertically 3-4 times.

  3. For extra-crispy fries, fill a medium-sized bowl with ice water and soak sweet potato fries for 15 minutes. Remove from ice bath and towel-dry until all water is absorbed. (optional)

  4. Place sweet potato fries on a baking sheet lined with parchment paper or silicone baking mat. Add fresh rosemary, thyme, and sage.

  5. Drizzle with oil and toss until well-coated.

  6. Grab your fresh garlic head for your roasted garlic aioli. Cut the top of the garlic head off and drizzle the exposed top with oil. Wrap entire garlic head in aluminum foil and add to the baking sheet.

  7. Bake sweet potato fries and garlic head in the oven for 45 mins-1 hour, tossing and flipping fries frequently to ensure even cooking.

Roasted Garlic Aioli:

  1. Remove roasted garlic head from oven and unwrap aluminum foil.

  2. Squeeze out roasted garlic cloves and add to blender with the remaining ingredients.

  3. Blend until smooth and creamy. Add to bowl and sprinkle on some additional smoked paprika. Enjoy this tasty dip with your crispy, herbaceous sweet potato fries!
