Medjool dates: fresh medjool dates can be found in the produce section of most grocery stores. Medjool dates are a fresh fruit originating from middle eastern cuisine. They are sweet and have a caramel-like texture, making them a staple in plant-based dessert recipes.

If you have extra dates on hand, be sure to make some easy medjool date caramel!

Dark chocolate: any dark chocolate or dairy-free milk chocolate will work for this recipe! My favorite is Hu because of their simple, clean ingredients.

Be creative and try hazelnut dark chocolate or other unique flavors for a delicious twist!

Dairy-free white chocolate: Enjoy Life and Evolved brands have amazing vegan white chocolate. Melt over boiling water to create a creamy drizzle.

Roasted peanuts: for a hearty crunch! Peanuts are rich in magnesium and iron.

Peanut butter: or any nut butter. For a peanut-free version, use sunflower butter and omit the peanuts, or sub with sunflower kernels.

Hemp seeds (optional): for added protein and nutrients, sprinkle on some hemp seeds. These super seeds are also rich in omega-3s, vitamin E, and antioxidants.

 
 

How to Make Nutty Chocolate Swirl Medjool Date Bars

This recipe is designed to be easily no-bake, meaning you don’t need to turn the oven at all. Simply layer your ingredients, refrigerate for a couple hours, and enjoy straight out of the fridge.

First, you’ll pit your medjool dates by slicing vertically and removing the seed.

Then, you’ll smash your pitted dates at the bottom of your baking dish, creating a chewy base layer.

Next, you’ll spread peanut butter and add a layer of roasted peanuts.

Finally, drizzle dark chocolate and white chocolate. Swirl together using a skewer or similar, and top with optional hemp seeds and additional peanuts.

Refrigerate for 2 hours and enjoy!

Made with luscious medjool dates, crunchy nuts, and decadent white and dark chocolate swirls, these bars are a delightful treat for any time of day. Enjoy the wholesome goodness of plant-based ingredients in every bite.

Equipment:

8x8 glass baking dish or similar pan, parchment paper, dry measuring cups/spoons

Ingredients:

fresh medjool dates

1/3 cup peanut butter

1/2 cup roasted peanuts

dark chocolate

vegan white chocolate

1 tbsp avocado oil or coconut oil

Toppings:

hemp seeds, optional

additional roasted peanuts

Instructions:

  1. Remove the pit from your medjool dates by slicing down the middle.

  2. Line baking dish with parchment paper. Clip the sides onto the baking pan if you have trouble getting the paper to lay flat.

  3. Smash the medjool dates onto the baking pan, forming a layer.

  4. Spread peanut butter oven medjool date layer.

  5. Melt dark chocolate and white chocolate in separate glass containers with 1/2 tbsp oil each to make smooth

  6. First, drizzle dark chocolate over peanut butter layer. Next, drizzle white chocolate over the dark chocolate.

  7. Use a wooden skewer to swirl the white and dark chocolate together.

  8. Add optional toppings and refrigerate for 2 hours.

  9. Enjoy!
