How to Make 5-Ingredient Vegan Chocolate Mousse with Silken Tofu (Gluten Free)

This protein-packed recipe is incredibly simple to make, containing only 5 ingredients and a high-speed blender. No pots, pans, or cooking required, leading to an easy clean-up and maximum time efficiency for this nutrient-rich snack.

Silken tofu: as opposed to firm tofu which provides a denser result, silken tofu is much softer and ‘silkier’. When blended, silken tofu becomes creamy and smooth, similar to the consistency of pudding. 1 block of silken tofu boasts 20 grams of protein. Silken tofu is a ‘complete’ plant-based protein source, meaning it contains all nine essential amino acids.

Dark chocolate: any type of chocolate will work for this recipe. I used pure dark chocolate melted over boiling water. If you choose to use a sweeter chocolate, such as milk chocolate, you may want to dial back on the maple syrup. As always, taste test and adjust accordingly.

Cacao powder: bitter on its own, but sweet and chocolate-y when paired with sweetener, cacao powder adds an extra chocolate-y and extra nutritious boost to this mousse.

Cacao powder is rich in iron, magnesium, calcium, antioxidants and even has mood-boosting properties!

Maple syrup: unrefined, all-natural sweetener with loads of antioxidants

Peanut butter: or any nut butter you have on hand!

Chocolate protein powder (optional): adding a high quality, plant-based protein powder to this mousse can take it to the next level! In this recipe, I sometimes use a half-scoop of Truvani chocolate protein powder as a substitute for 1 tbsp of cacao powder. This step adds a whopping 10 more grams of protein to the already protein-packed dessert.

Equipment:

high speed blender, measuring spoons

Ingredients:

1 block silken tofu

100 g dark chocolate (melted)

2 tbsp cacao powder

2 tbsp pure maple syrup

1 heaping tbsp peanut butter

optional toppings:

sliced banana

crushed nuts

additional nut butter

shaved dark chocolate

Instructions:

  1. Blend all ingredients in a high speed blender or food processor until smooth and creamy.

  2. Chill and enjoy with decadent toppings!
