Gluten-Free All Purpose Flour: this recipe uses 1:1 gluten-free baking flour (Bob’s Red Mill brand). This baking flour is amazing for making realistic gluten-free recipes, like this one. It contains several starches and tapioca flour, which makes the baking product more malleable and stretchy.

Flour substitutions have not been tried for this recipe yet. If you do choose to experiment with other baking flours, such as oat, almond, brown rice, or regular all-purpose flour, the measurements may be different and may require added tapioca starch or xantham gum to achieve the desired result. Equipment:

large mixing bowl, liquid + dry measuring cups/spoons, 8x8 baking pan

Ingredients:

dry:

1 cup gluten-free all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp ground ginger

1/2 tsp ground cinnamon

pinch of ground cloves

pinch of salt

wet:

2/3 cup brown sugar

1/3 cup maple syrup

1/4 cup tahini

1/4 cup vegan unsalted vegan butter (melted)

2 tbsp ground flax seed

4 tbsp water

1 tsp vanilla extract

toppings

vegan white chocolate (melted)

tahini drizzle

maple syrup

Instructions:

  1. Preheat oven to 350 F. Grease or line an 8x8 baking pan.

  2. Combine wet ingredients in a large mixing bowl.

  3. Then, add dry ingredients. Mix everything together thoroughly.

  4. Spread blondie mixture evenly in pan and bake for 20 minutes.

  5. Once cooled, add toppings. Melt white chocolate with a dollop of coconut oil or avocado oil and drizzle over blondies. Mix tahini with a little bit of maple syrup and drizzle over white chocolate. Swirl together with a toothpick or skewer.
