Gluten-free, dairy-free peanut butter satin pie has a rich peanut butter filling that's sweet, smooth, and silky. It sits in a chocolate-y gluten-free crust, and is topped with dark chocolate drizzle and crushed peanuts. Enjoy this dessert with a dollop of french vanilla ice cream, a cozy blanket, and a rom com.

Equipment:

high-speed blender, measuring cups, medium-large mixing bowl, pie pan

Ingredients:

Crust

2 cups almond flour

1/4 cup cacao powder

1/3 cup maple syrup

1 tsp vanilla extract

Peanut Butter Filling

1 can coconut milk

1/3 cup vegan cream cheese

1/3 maple syrup

1 cup peanut butter

1/4 cup avocado oil

2 + 1/2 tbsp chia seeds

Toppings

1/2 cup dark chocolate chips or chocolate of choice

1 tsp avocado oil

1/3 cup peanuts

1 tbsp shaved dark chocolate

Instructions:

  1. Preheat oven to 350 F.

  2. Begin making the crust: combine all ingredients in a large mixing bowl, and whisk or knead by hand until dough mixture is well combined.

  3. Grease round pie pan and press crust dough mixture into the bottom of the pan and up the sides to create a hollow base.

  4. Bake for 10-15 mins. Allow crust to cool.

  5. Prepare the peanut butter filling: blend all ingredients in a high speed blender until well combined.

  6. Pour mixture evenly on top of pie crust.

  7. Refrigerate or freeze overnight. Enjoy with a dollop of French vanilla ice cream and a good sitcom!
