Ingredients
1 large sweet potato
1/8 cup avocado oil
Pretzel S'mores
1 slice sweet potato
3 vegan marshmallows
2 tbsp dark chocolate chunks
2 tbsp crushed gluten-free pretzels sub regular pretzels
Black Bean Avocado
1 slice sweet potato
1/4 c black beans mashed
1 half avocado mashed
2 cherry tomatoes diced
1/2 tbsp lemon juice
1/2 tsp hot sauce
1/2 tsp cumin
1/2 tsp salt
1/2 tsp pepper
Peanut Butter Banana
1 slice sweet potato
6-8 slices banana
1 tbsp peanut butter
1 tsp hemp seeds
1 tsp maple syrup
Plant-Based Egg & Sausage
1 slice sweet potato
1/4 cup plant-based egg
1/8 cup vegan sausage crumbles
1/4 tsp kala namak optional
1 tsp sea salt
1 tsp cracked pepper
1/2 tsp ketchup
Instructions
Roasted Sweet Potato Slices
Preheat oven to 400 F. Line a baking sheet with parchment paper or silicone baking mat.
Cut your sweet potato lengthwise into 1/2 inch slices. Brush both sides of each slice with oil and place in the oven for 30-40 minutes or until they reach your desired texture and crispiness.
Allow to cool slightly and add toppings.
Pretzel S'mores
Toast marshmallows (I use my gas stovetop) and spread on sweet potato toast. Top with remaining ingredients and enjoy.
Black Bean Avocado
Dice tomatoes into small pieces.
Mash black beans and avocado in two separate bowls. Add cumin, salt, and pepper to the black beans. Add lemon juice, salt, and pepper to avocado.
Spread black bean on sweet potato toast, then mashed avocado, and diced tomatoes. Drizzle with hot sauce.
Peanut Butter Banana
Spread peanut butter on sweet potato toast. Then, top with banana slices, hemp seed, and a drizzle of maple syrup. Dig in!
Plant-Based Egg & Sausage
In a skillet, cook scrambled plant-based egg with kala namak, sea salt, and cracked pepper. Then, cook sausage crumbles.
Add egg and sausage to sweet potato toast and drizzle with ketchup.
How to Make Sweet Potato Toast
Begin with a few medium sized sweet potatoes.
Cut your sweet potato lengthwise into 1/2 inch slices.
Brush both sides with avocado oil and place on a baking sheet with parchment paper or use a baking mat.
Roast in the oven for 30-40 minutes. Check every 10 minutes or so to be sure the sweet potatoes haven’t burnt.
Remove from the oven once they’re reached your desired crispiness.
Add toppings of choice and bon appétit!
