Before going vegan, eggs were a favorite breakfast of mine. Now that I am vegan, I’ve found a few plant-based alternatives for eggs. Contrary to popular belief, it’s still possible to enjoy savory, buttery eggs on a plant-based diet without sacrificing flavor!

Delicious, hearty, and comforting, plant-based veggie egg bites always satisfy my egg-y cravings and act as the perfect morning pick-me-up.

Plant-Based Veggie Egg Bites with JUST Egg

Savory, plant-based egg bites made with JUST Egg. Filled with mixed vegetables and vegan parmesan for a delcious breakfast. Pair with buttery, gluten-free toast.

Equipment

  • Oven

  • Muffin tin

  • Cutting board

Ingredients  

  • 1 bottle liquid JUST Egg

  • 2/3 cup mixed vegetables chopped finely

  • red bell pepper

  • zucchini

  • roasted sweet potato

  • broccoli

  • red onion

  • 1/4 cup vegan Parmesan Follow Your Heart

  • 1/2 tsp kala namak optional

  • 1/2 tsp garlic powder

  • 1 tsp sea salt

  • 1 tsp cracked pepper

Instructions 

  1. Preheat oven to 350 F. Wash and chop your vegetables into small pieces. Mix them together and place into 9 muffin tins (this may vary depending on the size of your tins)

  2. Add kala namak (if using) and garlic powder to JUST Egg. Stir in until well combined. Pour JUST Egg in muffin tins over the veggies.

  3. Top with vegan Parmesan, sea salt, cracked pepper.

  4. Place in the oven for 30 minutes. Enjoy!


Make the Switch

Compared with the horrors of meat & dairy production, some may argue that the egg industry is more “sustainable” and “humane” in terms of animal treatment and environmental impact.

The harsh truth is that this multi-billion dollar industry profits from the exploitation of thousands of helpless beings. Chickens in factory farms, battery-enriched farms, and even “free-range” farms are forced to live in cramped, windowless sheds with thousands of other chickens in horrific conditions.

Additionally, it is considered standard practice “to cut off a large portion of each hen’s beak with a hot blade without the use of painkillers so that hens in close confinement don’t peck each other. A hen’s beak is very sensitive, akin to a human’s fingertips. Research suggests (link is external) that beak trimming leads to both acute and chronic pain with symptoms similar to those of human amputees who suffer from phantom limb pain.

Furthermore, male chicks are slaughtered shortly after hatching, as they serve no use to the egg or meat industry.

Chickens are incredibly intelligent beings with the ability to experience a wide range of emotions. Chickens experience complex feelings just as humans do, including happiness, sadness, loneliness, and distress.

What’s more, chickens pass down knowledge from generation to generation and can recognize over 100 individual faces, not only of their fellow chickens but of humans. They also understand that recently hidden objects still exist, something beyond the capability of a two-year-old human child.

By transitioning to plant-based egg sources, such JUST Egg or Vegan Tofu Scrambled Eggs, you’re showing immense compassion for these sensitive, loving animals and doing your body a huge favor.

Health Risks of Consuming Eggs

As a hearty, protein-packed breakfast option, eggs have become one of the most exceedingly popular foods in the world, and are oftentimes seen as a great “health food”.

Contrary to this, many diseases and health complications have been linked to the consistent consumption of eggs.

The dangers of eggs have been scientifically researched for years in many evidence-based studies. The findings can be traced back to their high cholesterol levels, which can be detrimental to human bodies. High cholesterol content contributes to conditions such as heart disease, stroke, and risk of earlier death.

A recent 2021 study concluded that “for every additional 300 mg of dietary cholesterol consumed per day, the risk of all-cause, cardiovascular disease, and cancer mortality increased by 19%, 16%, and 24%, respectively. Given that a whole egg contains roughly 186 mg of cholesterol, this means eating two eggs each day could be increasing your likelihood of mortality from these causes.”

Thankfully, both JUST Egg and tofu contain 0 mg of cholesterol. JUST Egg is also high in protein and low in saturated fats.
