Vegan Comfort Food

The changing of the seasons also brings a change in the kinds of food we eat. In the spring and summer I find myself going for lighter meals, like salads and smoothies. But in the winter and fall, my go to comfort food is rich, creamy pasta.

With colder weather I love cozy recipes that warm my body and soul. Creamy cashew Alfredo pasta is one of my favorite dishes to make during this time of year because of its warmth and rich, carb-filled goodness.

It’s the perfect recipe for cold, lazy weekends where you don’t want to leave the house. Cuddling up with a bowl of this pasta and a good movie is the ideal vibe for the chilly months ahead.

Some of my other favorite vegan comfort meals are gnocchi with creamy basil pesto, Italian white bean soup, and homemade chocolate cookies.

Cashew Alfredo Sauce

Making this vegan white sauce is simple and takes less than 10 minutes.

  1. Begin by boiling 2 cups of water on the stove and place cashews in the water for 5-10 minutes to soften.

  2. Next, drain the water and add the softened cashews to a blender.

  3. Add silken tofu, nutritional yeast, white miso, vegan parmesan cheese, hemp seeds, freshly minced garlic and your seasonings.

  4. Finally, blend all of your ingredients on high-speed until everything is well combined and creamy.

  1. Bringing tons of flavor and crisp, chewy textures, these brussel sprouts are as delicious as they are easy to make!

  2. Preheat your oven to 350 F. Thinly chop the brussel sprouts and add to a bowl with avocado oil, balsamic vinegar, salt and pepper. Toss until evenly coated.

  3. Line a baking sheet with a baking mat or parchment paper. Evenly distribute brussel sprouts onto the baking sheet and place in the oven for 30-40 minutes, or until browned and crispy.

  4. Toss halfway through for even cooking.

Creamy, savory white sauce. Crispy, balsamic Brussels sprouts. Yummy brown rice spaghetti noodles. The ultimate trio for this herbaceous, mouth-watering, and absolutely heavenly pasta dish.

Ingredients  

  • 1 box brown rice spaghetti noodles sub any noodle

Creamy Cashew Sauce

  • 1/2 block silken tofu

  • 1 cup cashews

  • 1/4 cup nutritional yeast

  • 2 tbsp white miso

  • 4 tbsp lemon juice

  • 1 tbsp hemp seeds

  • 2 tbsp vegan Parmesan

  • 2 cloves fresh garlic minced

  • 2 tsp garlic powder

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp oregano

Balsamic Roasted Brussels Sprouts

  • 1.5 cup Brussels sprouts thinly chopped/shaved

  • 1/8 cup avocado oil

  • 2 tbsp balsamic vinegar

  • 1 tsp salt

  • 1 tsp pepper

Instructions 

Balsamic Roasted Brussels Sprouts

  1. Preheat oven to 350 F. Thinly chop Brussels sprouts and add to a bowl with avocado oil, balsamic vinegar, salt and pepper. Toss until evenly coated.

Cashew Sauce

  1. Boil water in a large pot and prepare pasta noodles according to instructions on the box. Drain the water and add noodles back to the pot.

  2. Pour in cashew sauce and mix into the pasta until combined. Then top with Brussels sprouts, and enjoy!
