A potato lover in all forms, these garlicky golden potatoes with dill have become one of my favorite ways to prepare them. Herbaceous, plant-powered spuds make the perfect appetizer or hearty side dish. Enjoy them alongside a refreshing Mediterranean salad or Tuscan Mushroom & White Bean Soup.

Golden Potatoes

In this recipe, I use melody potatoes. What are melody potatoes?

Melody potatoes are round, yellow spuds, delicious in a variety of different recipes, including boiled, mashed, and grilled.

Slowly steamed and lightly pan-fried, these potatoes taste amazing in this soft, yet crispy cooking method.

Alternatively, use any yellow, golden, or russet potato for this recipe.

 

How To Cook Garlicky Golden Potatoes with Dill

Making these stove-top potatoes are a simple process, requiring only a few kitchen utensils. The key to this recipe is cooking the potatoes on a low heat setting, allowing them to slowly steam and become soft in the pan. This also allows for the garlic and scallions to marinate with the potatoes, infusing their natural aromas without burning at the bottom of the skillet.

You’ll begin by chopping your potatoes into small cubes. The smaller the cubes, the less time they will need to cook. Keep this in mind during the cooking process, and always check your potatoes to ensure they’re fork-tender.

After sautéeing your garlic & dill in hot oil, you’ll add your spuds to the pan and toss.

Next, you’ll reduce heat, cover, and let cook for 20 minutes. Check the softness of your potatoes and cook longer if necessary. For crispier potatoes, turn up the heat at the end, and pan-fry for 5 minutes or until the sides are browned.

Lastly, you’ll top your spuds with loads of fresh dill, cracked sea salt, and raw scallions. Dig in!


Garlicky Potatoes with Fresh Dill & Scallions

Flavorful, herbaceous potatoes make the perfect healthy appetizer and side dish. Loaded with fresh dill, garlic, and green onions, these melt-in-your-mouth potatoes will leave you feeling both comforted and nourished. Enjoy with a side salad or your favorite soup!

Ingredients  

  • 3 tbsp green onions chopped

  • 2 cups yellow potatoes diced

  • 2 cloves fresh garlic minced or finely chopped

  • 2 tbsp fresh dill chopped

  • 2 tbsp avocado oil or extra virgin olive oil

  • 1/4 tsp sea salt

  • 1/4 tsp garlic powder

  • 1/8 tsp cracked pepper

  • 1/8 tsp onion salt or onion powder

Instructions 

  1. Wash and chop potatoes into small cubes. Small pieces will allow for faster, more effective cooking.

  2. Heat oil in a medium-sized skillet. Add your garlic and half of your green onions, saving the remainder for garnish.

  3. Saute for 30 seconds, or until fragrant. Then, add your potatoes to the pan and mix until well combined.

  4. Reduce heat to a low temperature to prevent burning. Cover and let cook for 20 minutes or until potatoes are fork tender, tossing occasionally.

  5. After they are done cooking, increase to medium-high heat and pan-fry for 5 mins. Add a little more oil if necessary.

  6. Add in granule seasonings and toss. Serve and top with leftover green onions and fresh dill. Enjoy!
