What’s In a Plant Protein Salad?

Tofu is a plant-based protein made from soybeans. This heart-healthy, complete protein is vegan, gluten-free, cholesterol-free, and dairy-free. Easily adaptable and versatile, tofu makes a great main protein source in a variety of vegan and plant-based recipes. Crispy, salt & pepper tofu cubes add 10 grams of protein to this salad, paired deliciously alongside more sustainable proteins, like chickpeas and avocado.

Chickpeas are both fiber- and iron-rich legumes. Unlike animal proteins, which contain virtually no fiber, chickpeas pack in nearly 12 grams of fiber in a 1 cup serving. For this reason, chickpeas are incredibly beneficial for gut health, lowering cholesterol, and preventing heart disease. To add, our 1/3 cup serving contains approximately 5 grams of protein!

Tender in the center and crispy on the outside, roasted broccoli is an unbelievably tasty addition to any salad! Broccoli is higher in protein than most vegetables, with 3 grams per 1 cup serving. Drizzled with olive oil, seasoned to perfection, and slowly baked in the oven, roasted broccoli adds delicious flavor and crunch to our protein-rich salad.

Plant Protein Salad with Broccoli & Potatoes

Protein-rich, plant-based salad loaded with tofu, chickpeas & avocado for a whopping 35 g of protein! With sustainable, complete proteins and loads of nutrients, this hearty salad will change the way you view protein and nutrition.

Ingredients  

  • 1 1/2 cup spring mix lettuce or greens of choice

  • 1/2 cup tofu cubed

  • 1/3 cup chickpeas

  • 1/2 cup potatoes cubed

  • 1/2 cup broccoli florets

  • 1-2 tbsp hemp seeds

  • 1/2 avocado

  • 1/3 cup cucumber chopped

  • 2-3 tbsp plant-based ranch dressing or dressing of choice

  • 1 tbsp fresh dill

  • 2 tbsp olive oil

  • 1 tbsp sea salt

  • 1 tbsp cracked pepper

  • 1 tbsp garlic powder

Instructions 

Roasted Broccoli

  1. Preheat oven to 350 F. Line baking sheet with parchment paper or silicone baking mat.

  2. Toss broccoli florets in 2 tsp oil and 1 tsp of sea salt, pepper, & garlic powder. Spread out on baking sheet and place in the oven for about 30 minutes, or until slighty browned and crispy on the edges.

Air-Fried Tofu

  1. While broccoli roasts, prepare your tofu by slicing into cubes. Toss tofu cubes in 2 tsp oil, 1 tsp salt, pepper & garlic powder. Place in air-fryer for 10-15 minutes on 375 F.

Air-Fried Potatoes

  1. Cube potatoes and toss in 2 tsp oil, 1 tsp salt, pepper & garlic powder. Place in air-fryer for 15 minutes on 375 F or until fork tender and crispy.

Assembling Salad

  1. Add greens and cucumber as your base. Top with roasted broccoli, potatoes, tofu, chickpeas, avocado, hemp seeds, and fresh dill. Drizzle with plant-based ranch dressing or dressing of choice.
