Low on ingredients? Simplify this recipe by using only the mushrooms, olive oil, balsamic, and garlic. Swap out garlic powder for fresh if it isn’t available.

Garlic Balsamic Roasted Mushrooms

A deliciously savory dish. These garlic roasted mushrooms pair well with brown rice, mashed potatoes, or fresh bread. Great as a side dish or used as a gravy or garnish.

Equipment

  • Frying pan

Ingredients

  • 4 handfuls white mushrooms (halved)

  • 3 tbsp balsamic vinegar

  • 1 tbsp soy sauce

  • 1 tbsp olive oil extra virgin

  • ½ tbsp brown sugar or agave

  • 3-4 cloves garlic minced

  • pinch dried thyme

Instructions

  1. Peel or wash the mushrooms to clean them. Cut in half or quarters, depending on your preference (the mushrooms shrink the longer you roast them)

  2. Add mushrooms to a medium-sized frying pan on medium heat. Add the balsamic vinegar, soy sauce, olive oil, and brown sugar or agave. Mix until blended.

  3. Lower heat to low when the mushrooms begin to sizzle. Allow it to cook for 15-20 minutes, stirring occasionally.

  4. Add minced garlic or garlic powder and sautée for 30 seconds - 1 minute.

  5. Remove from heat and serve with rice, potatoes, or roasted vegetables.
