When it comes to snacking, we tend to look for the quickest, easy access foods we can find to satisfy us in that very moment. This can often lead to unhealthy snacking choices, like chips, candy, or other processed foods that don’t really fill us up, and leave us even hungrier than before. Quick, processed snacks have their time and place, don’t get me wrong, but eating these all the time can be detrimental to our health.

Doctor it up with peanut butter, potassium-rich bananas, magnesium-filled dark chocolate, fiber-dense medjool dates, and organic hemp seeds for a complete plant-based protein source.
Vegan frozen yogurt bark is perfect to have on hand as a grab-and-go snack, especially during the warm months!
How to Make Vegan Frozen Yogurt Bark
Dairy-Free Yogurt: use your favorite dairy-free yogurt in this recipe! Silk, So Delicious, and Kite Hill all make really tasty, store-bought vegan yogurts. Our favorite is CocoJune Pure Coconut because of its’ simple ingredients and lack of additives or gums. CocoJune Pure Coconut is a plain, unsweetened coconut yogurt, so we add maple syrup for sweetness (as stated in the recipe below). If you use sweetened yogurt for this recipe, omit the maple syrup!
Nut Butter: use any kind of nut butter you enjoy! However, make sure that it’s runny so that you can swirl it around, ensuring each piece of bark has a sufficient amount of nut butter. In this recipe, we use Maranatha Organic Peanut Butter.
Dark Chocolate Chips: our go-to chocolate for this recipe is Enjoy Life Rice Milk Chocolate Morsels. Enjoy Life is allergen-free, so it’s a great choice if you have food allergies or plan on serving this to a group of people or children! Alternatively, feel free to use any kind of chocolate chips you prefer.
Banana: who doesn’t love a peanut butter & banana combo? Thinly slice banana and press it into the yogurt before freezing. The banana slices may turn slightly darker after being in the freezer for a few days, but worry not - it’s still safe and delicious to eat!
Medjool Dates: also known as “nature’s caramel”! Fresh medjool dates add a very nice, chewy component to the frozen yogurt bark that pairs excellently alongside the other textures. Medjool dates also taste like caramel, which tastes amazing with peanut butter, banana, and dark chocolate. Feel free to omit this ingredient if you don’t have it on hand!
Hemp Seeds: hemp seeds are a complete plant-based protein source, meaning they contain all nine essential amino acids necessary for your body. Hemp seeds also happen to be incredibly nutritious, full of omega-6 and omega-3, B vitamins, iron, Vitamin E, phosphorus, magnesium, zinc, and many more. Add these nutty seeds to your frozen yogurt bark for an extra dose of health benefits!
Peanut Butter Banana Frozen Yogurt Bark

Make your own vegan frozen yogurt bark to have on hand at any time of the day for mindful snacking! This quick, easy recipe consists of coconut yogurt, peanut butter, banana, melted chocolate, and fresh medjool dates to deliver the tastiest frozen yogurt bark from the comfort of your own kitchen.
Serving Size: makes about 25 pieces of bark
Equipment:
freezer, baking sheet, parchment paper/silicone baking mat, measuring cups, measuring spoons
Ingredients:
2 cups dairy-free yogurt (we use unsweetened coconut yogurt)
2 tbsp maple syrup (omit if using sweetened yogurt)
1 banana, sliced
3 medjool dates, pitted and chopped
1/2 cup chocolate chips
2-3 tbsp peanut butter
1 tsp coconut oil
1 tbsp hemp seeds
Instructions:
Line baking sheet with parchment paper or silicone baking mat to prevent sticking. Mix yogurt and maple syrup in a bowl (if using sweetened yogurt, skip this step). Spread yogurt evenly on pan.
Dollop peanut butter onto yogurt and use a chopstick or toothpick to swirl it and spread it around.
Melt chocolate chips and coconut oil over boiling water or in the microwave. Drizzle melted chocolate onto the yogurt.
Place banana slices and chopped medjool date pieces onto the yogurt and gently press down.
Sprinkle on hemp seeds.
Place in the freezer for 2-3 hours or overnight. Once fully frozen, use your hands to break the yogurt into perfectly irregular bark pieces.
Store frozen yogurt bark in the freezer for about a week or more!
