Creamy Peanut Sriracha Slaw

Ideal for meal prep and bursting with flavor. This spicy, creamy and crunchy peanut slaw recipe is simply irresistible. We combine the sweetness of peanut butter with the zesty tang of sriracha peppers. Then to take it up a notch we add the savory goodness of lime and fresh ginger. All of these flavors come together to create an absolutely tasty sensation. This creamy peanut sriracha slaw packs a lot of flavor into a no sweat coleslaw.

Use this recipe for parties, picnics and meal prep. It is a great choice if you are prepping ahead of time. The longer the slaw marinates, the more harmonious the dish becomes. As the tangy umami flavor matures the overall complexity of the dish soaks deeper by the minute. Prepping the night before or even a couple of days prior to your event is absolutely acceptable and may give you a more developed taste than a slaw that was put together that morning.

Preparing Your Peanut Sriracha Slaw

You have quite a few options for the base of this creamy peanut sriracha slaw based on your budget and prep time. Most supermarkets stock bags of cabbage in the produce section. I opted for a bag of rainbow cabbage with carrots, broccoli, kohlrabi, red cabbage and cauliflower. This saved time and was actually cheaper than buying each ingredient on its own. Vegetable prices vary by the season, so be sure to compare market prices of fresh vegetables with their pre-packaged counterparts. And please remember to rinse and recycle any plastic packaging of your vegetables.

If you would rather cut and prepare fresh ingredients for the base of this slaw add an extra 15-20 minutes of prep time. When time is not a concern nothing beats fresh ingredients. Carrots, broccoli, and green and red cabbage taste incredible with the spicy peanut sauce. You can also mix and match your preferred vegetables for a dish that is uniquely yours.

To prepare, chop your vegetables into small shreds or whatever you would consider a bite size piece. When customizing your own slaw, gradually add the sauce to ensure you don’t over saturate or undercoat your base. Adding more sauce creates a creamy texture while using less offers a more crunchy sensation.

Serve the creamy peanut sriracha slaw on its own or as a side dish. It pairs divinely with our sesame soba noodle salad recipe. As a garnish, top with toasted sesame seeds. Full of fiber and zinc, sesame seeds are an excellent source of the vitamins that keep our hair and skin healthy. I also love to halve an avocado and eat it with the slaw. Because avocados brown so quickly, I choose to do this step right before eating.


Creamy Peanut Sriracha Slaw

Equipment:

  • Large mixing bowl

Ingredients:

Rainbow Slaw Mix*

  • 2 cups red cabbage

  • 1 cup broccoli

  • 1 medium carrot

  • 1 cup cauliflower

  • 1 cup kohlrabi

Sauce

  • 3 tbsp peanut butter creamy

  • 3 tbsp rice vinegar

  • 2 tbsp warm water

  • 2 tbsp lime juice

  • 1 ½ – 2 tsp Sriracha or your favorite hot sauce depending on heat preference

  • 1 tsp toasted sesame oil optional

  • ½ tsp soy sauce

  • ½ tbsp minced ginger optional

Instructions

  1. Rinse raw slaw ingredients and shred into bite size pieces. Place into large mixing bowl.

  2. In a small mixing bowl, combine sauce ingredients and stir until texture is even.

  3. Pour sauce onto slaw mix. Stir until the veggies are evenly coated.

  4. Serve immediately or store in the refrigerator for up to a week.
