Easily customize this recipe. Swap the rosemary for fresh thyme, dried Italian herbs, or basil from your garden. Use more of less garlic depending on your preference. Vegan butter is optional, so use what best suits your lifestyle. Craft this recipe any way you’d like!

Use Russet Potatoes

In this recipe, I used russet potatoes because of their soft, fluffy interiors. Russets are the best baking potato, but other potatoes will absolutely work! Try Yukon gold, red, or fingerling potatoes. Whatever spuds you can get your hands on will be perfect in this recipe.

Cut your potatoes into bite size pieces. Keep in mind – the smaller the tots the faster they roast. It takes more time for larger chunks to become soft and thoroughly cooked inside. As they cook, make sure to check on your potatoes to ensure they are properly roasting and do not burn.

When making rosemary & garlic roasted potatoes, you have the option to soak your potatoes or prepare them dry. Soaking potatoes removes starch which allows them to turn crispy while roasting. If you’re short on time and want to reduce the prep of this recipe, feel free to skip this step. They will still taste delicious nonetheless!


Buttered Rosemary & Garlic Roasted Potatoes

Fragrant, flavorful, and mouth-watering. This tasty side dish pairs well with most meals – enjoy with sandwiches, salads, veggies, breakfast foods, or even on it's own!

Oven

Ingredients:

  • 5 medium-sized russet potatoes

  • 2 tbsp oil vegetable, olive, or truffle oil

  • 1-2 tbsp vegan butter

  • 3 sprigs fresh rosemary

  • 4 cloves fresh garlic

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic salt

Instructions:

  • Preheat oven to 425 F. While preheating, begin to prep your potatoes.

  • Wash and scrub potatoes clean. Dice potatoes into small pieces for baking.

  • Fill large bowl with water. Place diced potatoes in the bowl, and allow them to soak for at least 30 minutes. After 30 minutes, drain potatoes and rinse. Pat potatoes dry with paper towel until all water is absorbed.

  • Place potatoes on a large baking sheet. Drizzle potatoes with oil, seasonings, and 2 cloves minced fresh garlic. Toss until even covered. Place rosemary sprigs and 2 whole garlic cloves on top of the potatoes.

  • Place baking sheet in oven for 45 minutes, or a bit longer depending on your oven and your preferred crispiness. Toss frequently throughout roasting process.

  • When they are almost done, scoop 1-2 tbsp of vegan butter onto the potatoes and toss until melted. Place back in oven for 5-10 minutes.

  • Remove from oven and allow to cool. Serve immediately or store in refrigerator for 3-4 days.
