Baba Ghanoush

Baba Ghanoush (also spelt baba ganoush or baba ghanouj) is a savory and saucy dip made with eggplant, tahini, lemon juice, seasoning, and olive oil.

Originating in Lebanese and Middle Eastern kitchens, baba ghanoush is a dish enjoyed around the world in warm seasons – when eggplant is plentiful and fresh.

How To Prepare Baba Ghanoush

The traditional way to prepare this dish is to broil an eggplant over an open flame. For this recipe, feel free to broil in the safety of your oven and keep the baking concealed. Once you remove the eggplant from the oven, let it cool before peeling the crunchy layer of skin back. Remove the soft inside of the eggplant and add it to a mixture of tahini, garlic, lemon juice, cumin, and salt.

Once you’ve given everything a generous mixing, add a handful of fresh, chopped parsley and a spoonful of olive oil. Serve with pita bread or a toasted baguette and share with your family and friends.

Baba Ghanoush is a savory and saucy dip made from eggplant, tahini, lemon juice, seasoning, and olive oil. Originating in Lebanese and Middle Eastern kitchens, baba ghanoush is a dish enjoyed around the world.

Ingredients  

  • 1 eggplant medium – large

  • 2-3 cloves garlic

  • 2 tbsp tahini

  • 1/2 lemon juiced

  • 1 tsp cumin

  • 1 tsp salt

  • fresh parsley as much as you like

  • 1-2 tbsp olive oil as needed

Instructions 

  • Place an eggplant on a lightly greased baking sheet and stab with a knife several times to create vents. Broil eggplant for 10 minutes on high.

  • Bake eggplant at 400°F for 30 minutes.

  • Remove eggplant from oven and set aside to cool. In a bowl, combine tahini, garlic, lemon juice, cumin, and salt.

  • When the eggplant has cooled (5-10 minutes), remove the insides with a fork and cut into small chunks. Add eggplant to tahini mixture.

  • Add olive oil and fresh parsley and serve with pita bread, a toasted baguette, or your favorite crispy bread.
