How to Make Pink “Barbie” Pasta with Beets

Have you been seeing the viral “Barbie” inspired pasta all over social media? Now it’s your turn to make it!

This simple recipe contains only a handful of ingredients and makes the perfect treat for your next Barbie party, gender reveal, girls-night-in, and whatever occasion calls for pink pasta!

Simply roast 1-2 beets with a head of garlic, olive oil, and a pinch of salt until caramelized. Cook your spaghetti or pasta of choosing according to package instructions. Then, peel and add the caramelized beets and garlic to a food processor with a can of garbanzo beans, 2-3 spoonfuls of tahini, the juice of a lemon, and a bit of salty pasta water.

Combine the cooked pasta with the sauce and come on Barbie, let’s party!

Like other purple-colored vegetables, beets contain a multitude of antioxidants, which protect your cells from damage, which in turn lowers the risk of diseases like heart disease and cancer. Beets can also help with Type 2 diabetes, high blood pressure, heart disease, asthma, and obesity, due to their anti-inflammatory properties.

However, it is important to note that beets are high in oxalates, which can contribute to kidney stones. Those who are prone to kidney stones should consume beets and similar vegetables in moderation.

 

Vegan “Barbie” Pasta

The viral pink “Barbie”-inspired pasta made with beets, tahini, olive oil, and garlic.

Serving Size: 2-3 dishes

Ingredients:

1-2 Beets

1 Head of garlic

Pinch of salt

Olive oil

Juice of 1 lemon

Spaghetti, or pasta of your choosing

Instructions:

  1. Preheat oven to 345 F. Halve beets and head of garlic. Add to a baking tray with aluminum foil and top with olive oil and a pinch of salt. Roast for 20-25 minutes, until caramelized.

  2. Allow beets and garlic to cool for a few minutes, then peel and add to a food processor with tahini, garbanzo beans, olive oil, and lemon juice.

  3. Cook spaghetti according to package instructions and save a cup of pasta water, once pasta is salted and nearly finished cooking.

  4. Combine cooked pasta, beet mixture, and pasta water together and mix until creamy.

  5. Serve with freshly grated vegan cheese and enjoy!
