Ingredients You’ll Need for Tahini Chocolate Chip Cookies:

Tahini: undoubtedly, the star of the show! Tahini is a mild-tasting sesame seed butter, commonly used in savory recipes, like falafel, babaghanoush, and homemade salad dressings. Creamy and nutty, tahini also tastes fabulously in dessert recipes, making it quite a versatile spread. Tahini creates the perfect, earthy flavoring in this recipe to compliment the sweetness of the brown sugar and chocolate chunks.

Gluten-Free Baking Flour: this recipe is completely gluten-free and celiac-friendly. We love using Bob’s Red Mills gluten-free baking flour.

Coconut Flour: another great gluten-free flour option, coconut flour adds a hint of sweet, coconut flavor without being too overwhelming. Coconut flour is known as being a more malleable flour choice, creating a fluffier, more elastic texture that you may find in traditional, gluten-containing desserts. Although I recommend using both coconut flour and gluten-free baking flour, you can absolutely try changing up the recipe by using all gluten-free flour, regular flour, or any kind of flour that you have in your pantry. Light Brown Sugar: a soft sugar with a lot of flavor depth, brown sugar tastes the best in this chocolate chip recipe. To substitute, I would use maple syrup rather than white cane sugar, but feel free to experiment as you wish.

Chocolate Chips: you can’t have a chocolate chip recipe without the chocolate chips! We use Enjoy Life chocolate chips for a completely gluten-free, allergen-friendly choice. Alternatively, use any chocolate chips that you have on hand.

Sea Salt: sea salt is the most necessary ingredient for so many dessert recipes, including this one. The reason for this is that sea salt drastically brings out the sweet flavors in recipes. I wouldn’t skip out this!

 

Tahini Chocolate Chip Cookies

Made with superfoods tahini and dark chocolate, these vegan & gluten-free cookies are the perfect combination of sweet, crunchy, and earthy. Say goodbye to preservatives, dairy products, and other unnecessary ingredients, and say hello to anti-inflammatory, antioxidant-rich sweet treats that will satisfy your mind and body.

Equipment:

Baking pan, silicone baking mat or parchment paper, mixing bowl, liquid measuring cup, dry measuring cup, oven

Ingredients:

1/2 cup gluten-free baking flour

1/2 cup coconut flour

1 cup light brown sugar

1/4 cup tahini

1/4 cup full fat coconut milk canned

1 tsp baking soda

1 tsp baking powder

3/4 cup chocolate chips

1 tsp vanilla extract

1/2 tsp sea salt

Instructions:

  1. In a mixing bowl, combine tahini and brown sugar.

  2. Then, mix in coconut milk and vanilla extract until well combined.

  3. Add dry ingredients (baking soda, baking powder, coconut flour, gluten-free baking flour, sea salt) along with chocolate chips and mix until well combined.

  4. Form into balls (about 9-12) and place on baking sheet spread out.

  5. Bake for about 15-20 minutes. Remember: everyone’s oven is different so check on them throughout the baking process to assess whether they’ll need more or less time.

  6. Allow to cool, sprinkle with additional sea salt, and enjoy!
