Roasted Cabbage Wedges with Creamy Cilantro Sauce

Mouthwatering roasted cabbage wedges that are crisp on the outside and tender on the inside. With creamy vegan cilantro sauce, this healthy, cruciferous meal will become your favorite weeknight dinner or side dish!

Serving Size: about 7-8 cabbage wedges

Instructions:

1/2 cabbage head

2 tbsp extra virgin olive oil

1/2 tsp salt

1/2 tsp cracked pepper

1/3 cup Creamy Cilantro Sauce:

cilantro, roughly chopped

unsweetened, plain plant milk

silken tofu, cubed

lime juice

garlic clove

salt to taste

Instructions:

  1. Preheat oven to 350 F. Line a baking sheet with parchment paper or silicone baking mat. Drizzle with 1 tbsp olive oil.

  2. Slice cabbage head in half vertically. Remove the stem. Cut cabbage half into wedges (the number of wedges will depend on the size of your cabbage).

  3. Lay cabbage wedges on baking sheet and drizzle with 1 tbsp olive oil. Sprinkle on salt and pepper.

  4. Bake in the oven for 25-30 minutes, or until soft and tender with crispy edges.

  5. While baking, prepare Creamy Cilantro Sauce by blending all ingredients in a high speed blender.

  6. Remove cabbage from oven and drizzle with creamy cilantro sauce. Enjoy!
