Hearty Cabbage and Vegetable Soup Recipe

Indulge in the wholesome goodness of our plant-based Hearty Cabbage and Vegetable Soup, brimming with nourishing ingredients and bursting with flavor.

Serving Size: 4-6 portions

Equipment:

cutting board, large soup pot

Ingredients:

1 Yellow onion

1 Red pepper

2 Chilis (depending on how spicy you like your soup)

1/2 Head of cabbage

2 Tbsp olive oil

2 Tsp red chili flakes

2 Tsp curry powder

1 Tsp salt

1/2 Cup peas

1 Bag spinach

6 Cloves garlic

1 Can diced tomatoes

1 Can tomato puree (either from a jar, can, or fresh)

1 Can cannellini beans

1 Can dark red kidney beans

64 oz Vegetable Broth (or water & bouillon cube mixture, according to package instructions)

1 Cup shell pasta

1 Tsp dried oregano

1 Tsp dried basil

1 Tsp dried thyme

Instructions:

  1. Dice 1 yellow onion, red bell pepper, 2 chilis, and half of a head of cabbage and add to a large soup pot.

  2. Add olive oil, red chili flakes, curry powder, and salt to the soup pot. Mix and sautee on low-medium heat until tender, roughly 10 minutes.

  3. Once soft, add peas and a bag of spinach. Cook for an additional 5-7 minutes.

  4. Mince 6-8 cloves of garlic and add to the pot. Stir and sautee for 1-2 minutes, until fragrant.

  5. Add a can of diced tomatoes and tomato puree (from a can, jar, or fresh). Simmer for 5-7 minutes.

  6. Drain and rinse both cans of beans. Add to soup pot.

  7. Add vegetable broth (or water and bouillon cube mixture) and bring to a boil.

  8. Add a cup of shell pasta (or pasta of your choice), mix, and reduce to a low-heat simmer. Add dried herbs and mix.

  9. Cook for 15 minutes, stirring frequently so the pasta doesn’t stick together.

  10. Remove from heat and serve with fresh bread, pasta, or a salad. Enjoy!
