MAIN INGREDIENTS

Aquafaba

Chickpea brine, or aquafaba, is one of my favorite ingredients to bake with. When whisked, aquafaba becomes thick and bubbly. Acting as the perfect egg replacement because of its’ soft yet firm consistency, aquafaba is similar to beaten egg whites. It gives these cookies the soft, malleable texture you’re looking for.

Cane Sugar

In this recipe, I used white organic cane sugar. This sugar works best, although you may find success in experimenting with other sugars, such as coconut or brown sugar. If you end up trying any of these, we would love to know how they turned out for you!

Cacao

Rich in antioxidants, cacao is the super-food you need in your life. Cocoa’s bitter sister, “cacao” is the nutrient-rich byproduct of the cacao plant. Due to the low temperatures it’s processed at, cacao powder holds in all the antioxidants and nutrients that cocoa does not. Cocoa experiences extremely high temperatures during the roasting process that strips it of its’ primary nutrients.

Cacao contains high levels of Tryptophan, an amino acid and natural antidepressant that increases serotonin production in the brain. Don’t underestimate the power of this chocolate cookie for your next happiness boost! These yummy treats will leave you feeling warm and nourished inside.

Dark Chocolate

Another powerful antioxidant, dark chocolate brings even more nutritional benefits to the table in this recipe, with its’ heart-protective and anti-cancer properties. Sea Salt

This is important! Freshly cracked sea salt on top of these dark chocolate cookies takes them to the very next level. The sea salt really brings out the deep chocolate flavor. Don’t skip out on this step!

 

Chocolate Sea Salt Cookies

Equipment

  • Baking Pan

Ingredients  

  • 3/4 cup dark chocolate chips

  • 1/3 cup vegan butter

  • 3/4 cup cane sugar

  • 3 tbsp aquafaba whipped

  • 2/3 cup GF baking flour

  • 1/3 cup cacao powder or cocoa powder

  • 1/2 tsp baking soda

  • pinch of sea salt

  • 1 tsp vanilla extract

Instructions 

  1. Melt dark chocolate and vegan butter together.

  2. Whisk aquafaba in a small bowl until bubbly and thicker.

  3. Combine aquafaba, sugar, and vanilla with the chocolate mixture and whisk until smooth.

  4. In a medium sized mixing bowl, combine flour, cacao powder, baking soda, and salt. Pour in the chocolate and mix until thoroughly combined. You should end up with a thick brownie mixture. Cover and refrigerate for at least one hour.

  5. Preheat the oven to 350 degrees F. Line two baking pans with parchment paper. After your dough is done chilling, remove from the fridge and form into 12 round balls. Flatten slightly as you place them down on the pan. Only add 6 per baking sheet, allowing space between them.

  6. Bake one pan at a time for 10 minutes, turning halfway through, or until the top is slightly cracked. Remove from the oven, sprinkle with fresh sea salt, and allow to cool before removing them from the parchment paper.

  7. Best kept in the refrigerator, but delicious warmed up in the microwave or popped in the oven for a couple minutes.
