Ingredients
3 overripe bananas
1 cup old-fashioned oats
1/2 cup nut butter
1/8 cup maple syrup
1 tsp vanilla extract
Instructions
Preheat oven to 350 °F.
Mash bananas in a large mixing bowl.
Add remaining ingredients and mix until well combined.
Form into 12 round balls using your hands, and gently press down on your baking sheet. Use parchment paper or a silicone baking mat to prevent sticking and burning.
Bake for 10 minutes, or until cookies are lightly browned on the edges. Make sure you don't over-bake them! Remember: they will continue to bake during the cooling process.
Remove from oven and place on a cooling rack. Once cool, drizzle with additional nut butter and enjoy!
