Stepping Into a New Season

As we experience the changing of the seasons, we're excited to announce a change within our blog. We're shifting from Easy Vegan Info to the Plant Based Pals.

We've decided to make this change for a few reasons. First, "plant-based" is more inclusive than "vegan." While a completely vegan lifestyle is the goal, it is difficult to attain and sustain. We want herbivores, vegans, and meat eaters alike to enjoy our recipes and incorporate healthy dishes into their days.

We also wanted to make an intentional shift toward a community-based mindset around our blog. A healthy and happy lifestyle comes easier when you surround yourself with supportive friends, mentors, acquaintances, and pals.

As we both enter the 6th year of our plant-based lifestyles, we realize that it is the community we form and the connections we make that help us move forward in our journey and deeper into ourselves.

We believe a plant-based lifestyle is easier with a pal.

Sweet, savory, and truly delicious, caramelized onions are a favorite in my kitchen for their flavor and versatility.

When you have the time (2 hours or so), making caramelized onions is a relatively simple process that requires a bit of chopping, seasoning, and occasional stirring. It’s well worth it if you have the time!

Enjoy these caramelized onions in pasta, soup, paninis, and whatever you please!
