These fresh fruits have a surprising taste and texture resemblance to caramel. Sweet and sticky, fresh medjool dates make this caramel sauce effortlessly delicious and incredibly simple to create.

Compared with traditional caramel sauces, which are made with dairy and inflammatory refined sugars, medjool date caramel is made with whole, unprocessed ingredients that will leaving you feeling nourished rather than sluggish. Medjool date caramel is sweetened naturally with dates and maple syrup, making it the best healthy caramel sauce for all your dessert and breakfast needs. Use this caramel sauce for dipping, spreading, drizzling, and eating by the spoonful!

 
 

How to Make Silky Medjool Date Caramel

  • Use a food processor for efficient blending. High speed blenders can work in a pinch, but it will require some added water and a much longer time spent blending and scraping the sides down.

  • Fresh medjool dates can be found in the produce section at the grocery store. While other common dates, like deglet noor, could hypothetically be substituted in this recipe, we recommend sticking with medjool dates. Dried dates would not work well in this recipe.

  • Use unsweetened plant milk. We use Three Wishes Oat & Seed milk or homemade hemp seed milk. If you choose to use sweetened milk, dial back on the amount of maple syrup so it doesn’t end up too sweet.

  • Although medjool dates are sweet on their own, adding a bit of maple syrup brings the sweetness up a notch, while also adding more depth of flavor.

  • Buy already-pitted medjool dates to save on preparation time. If pitting by hand, consider saving the date seed and repurposing into Date Seed Coffee!

  • Store caramel in a glass jar in the refrigerator for up to 3 weeks.

Equipment:

Food processor, liquid measuring cups, glass jar (for storage)

Serving Size: 15-16 oz date caramel

Ingredients:

30 medjool dates

1/2 cup unsweetened plant milk

2 tbsp maple syrup

splash vanilla extract

pinch of sea salt

Instructions:

  1. Pit dates by slicing down the center vertically, and removing the seed.

  2. Place all ingredients into a food processor and blend, scraping down the sides throughout the blending process. Blend until the mixture becomes a smooth paste.

  3. Scoop into a 16 oz glass jar and use on your favorite dessert recipes!
