Turtles are indulgent chocolate-y treats that have been around for over a century. They get their name from their turtle-like resemblance, with pecans representing their feet, caramel shaping the body, and a layer of chocolate covering it like a shell.

In 1918, turtles were created by Bobbi & Louis Gordon Hopper at their Confections Company in California. Shortly after, “turtles” became popular in the San Francisco area before becoming a huge hit all over the nation.

“Turtles” Dates with Candied Pecans

Soft, chewy medjool dates, rich dark chocolate, and cinnamon-roasted candied pecans combine together in clusters to create an indulgent, plant-based rendition of a childhood classic: "Turtles"

Ingredients  

"Turtles"

  • ~17 fresh medjool dates

  • 1 cup dark chocolate

  • 1/2 tsp sea salt

  • 1 cup candied pecans see recipe below

Candied Pecans

  • 1 cup pecans

  • 1 1/2 tbsp plant-based butter we used Miyoko's

  • 1/4 cup brown sugar

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/4 water

  • 1/2 tbsp refined coconut oil

  • 1 cup sweetened dark chocolate chips

Instructions 

  1. Preheat oven to 350 F.

  2. Start preparing candied pecans by melting plant based butter in a skillet over medium-high heat.

  3. Add candied pecans, toss in butter, and cook for a few minutes until lightly toasted and aromatic.

  4. Then, add brown sugar, toss, and let cook for one more minute.

  5. Next, add cinnamon, sea salt, and water. Stir and cook until all water is absorbed.

  6. Add vanilla extract, mix until well combined, and remove from heat.

  7. Spread pecans on a baking sheet lined with a silicone baking mat or parchment paper. Make sure they're spaced out enough to avoid sticking together.

  8. Place in oven for about 10 mins . Remove and allow to cool.

  9. Arrange pecans in clusters of 3 or 4.

  10. Pit your dates, slicing down the middle & removing the pit. Stretch open and place down firmly on the pecan clusters.

  11. In the microwave or on the stovetop, melt coconut oil and dark chocolate. Drizzle over the pecan dates until fully covered.

  12. Place in fridge to cool. Once chocolate is solid, lightly sprinkle cracked sea salt on top.

  13. Store in fridge until ready to eat. Enjoy your delicious treat!
